Keto Diet Camping Recipes
Joe and I were engaged during our very first camping trip together. And despite the joy of that weekend, it was our very last camping trip together! If I could sleep anywhere, camping wouldn't be an issue, but I can't. I need my noise maker and a comfy place to lie my head.
BUT, I do appreciate the 'getting away"-ness of camping and the kids have been asking to camp for YEARS. It just hasn't happened. (READ: I've never planned a camping trip, so it never got done ;)
I decided that enough was enough, this will be our summer to camp. In a cabin. With running water. And beds. And a toilet. Oh, and a hot tub! HA!
We booked a cabin in Estes Park for July and I can't wait!!! THIS kind of 'camping' I can do. We'll be right on the Fall River, with a fire pit out back and a hot tub on the deck. We'll be able to cook over a fire, explore and spend time in nature, and unplug. All while still getting a decent night's sleep!
Since I eat Keto, and Joe is also giving Keto a try, I've researched some recipe inspiration that we can make work while we're at the cabin!

Butter Garlic Herb Steak Foil Packets
These butter garlic herb steak foil packets look AMAZING. And can easily be converted to be a Keto camping recipe by swapping out the potatoes and carrots with broccoli, cauliflower, or brussel sprouts!
Alyssa, from The Recipe Critic, includes a recipe for herbed garlic butter, but we've tried the Kerrygold grass-fed herbed butter from the grocery store and it was fantastic. I'm all about skipping steps when we can!

Cilantro Lime Shrimp Foil Packs
Oh, these look sooo good. We will obviously omit the corn and we could substitute in spiralized zucchini, broccoli, or even kale!
I love the idea of the sauces staying right in the little foil packet so we can use it as a little bowl.
Spicy Meatball Foil Packs
If you're prepping ahead of time at home, these meatballs would really hit the spot--especially on a chillier night out under the stars. These Spicy Meatball Foil Packs from Tbsp require too much prep work for my comfort level, but that threshold is pretty low ;)
To make these spicy meatballs Keto compliant, I'd obviously drop the pasta and sub in some zoodles or just eat them with some side veggies.

Garlic Parmesan Salmon and Veggie Foil Pack
I'm not a fan of green beans, but that's an easy swap for asparagus, or whatever veggie you want. Also, you could use any fish or chicken for this recipe if you're not into salmon. I love the butter paste technique Chelsea uses in this garlic parmesan salmon veggie foil pack.

This is a nice twist on fish on the grill! Pesto with tomatoes? Not something you'd think of when you think of a camping recipe.

Grilled Chicken Fajitas in Foil
These grilled chicken fajita foil packets are fast, flavorful, and only 6 grams of carbs per serving! Erin, from Well Plated, has a vast library of healthy recipes that I'll be scrolling through after I put this blog post to bed ;)
